It's Sprinkling Happiness
The happiest I've been in awhile was the day I discovered gluten-free red velvet cupcakes at Sprinkles. If you don't know what Sprinkles is, first be jealous that there is one down the street from me and two brace yourself for the cost of $3. 25 cupcakes. Sprinkles is a boutique for cupcakes. The red velvet with the cream cheese frosting has always been one of my favorites. Sadly, once I discovered I was gluten free I was banned from ever stepping into that little piece of heaven again.
While discussing local eateries with friends, it was casually mentioned that Sprinkles just started making gluten-free cupcakes. I lost my breath at the news and made her repeat those glorious words, Sprinkles gluten-free cupcakes. Still in shock she added, just the red velvet ones. Those are the best, I exclaimed, God does answer prayers! Everyone looked at me. No seriously, I pray for the big and small problems in this world. If there is anyone who could master gluten-free substitution it would be Sprinkles.
That weekend I visited the trendy bakery and ordered two gluten-free red velvets. (They also have vegan ones.) It was pure bliss eating the moist, sweet cake with all the rich cream cheese frosting for 20 seconds. I gobbled it up and wished I had eaten it a little bit slower. I marveled at how there wasn't a weird flour substitution after taste, how real it tasted, looked and felt. I couldn't stop smiling. Sprinkles knew how I felt, they knew exactly how to make the perfect cupcake. I was so thankful for this sweetness in my life. I looked at the 'G' and knew I could face another day. (yeah, the sprinkle on top is gross....It's like hard plastic, I don't understand why they don't make their namesake piece tastier) I closed the eco-friendly cardboard box they put the precious jewels in and couldn't wait to eat the other one the next day. I see some hope in gaining some weight back...
